Have you ever opened your veggie drawer in your refrigerator and said “ Oh! I forgot those were in there?”
Well,I did that yesterday. I found a bag of Red Delicious Apples that I had bought and forgot about. Thankfully they all weren’t bad yet, so I got to thinking..
What can I do with these? I didn’t want to make just one apple pie, so I made a couple small ones.
I made a quick pie crust, diced up the apples, added some lemon juice and spices. Cut small pie crust squares and put them in a muffin tin.
And Voila! Mini Apple Pies!
My daughters are loving these!! Which is funny, because they usually aren’t big apple pie fans. But I guess since they are the size of a muffin, they like it.
The Not So Perfect Housewife version..
I had to laugh when I was making these. I was doing it so off the cuff, that I wasn’t really measuring any of the spices. I grabbed the cinnamon and didn’t realize that I had opened the ‘POUR’ side of the top. If you look carefully at the top picture, you’ll see that the apples are QUIET covered in cinnamon. LOL.
They still tasted yummylicious though!!

These little apple pies just rock! These could be dangerous because I would just keeping taking another little pie and before I knew it, they would be all gone!
